- 1 teaspoon salt
- 1/4 teaspoon baking soda

Low Fat Christmas Eggnog

Enjoy the sweet treats this holiday season without guilt with Low Fat Christmas Eggnog recipe. Using one egg yolk only does give this eggnog recipe some pale appearance, but adding some yellow coloring into the mixture will do the trick. Rum extract con also be used to replace the alcohol in this Healthy Recipe.

Low Fat Christmas Eggnog

Ingredients
v  1 egg
v  4 egg whites
v  1 1/2 cups of fat free milk
v  3/4 cup of sugar
v  1/4 teaspoon of freshly grated nutmeg
v  1/4 teaspoon cinnamon
v  1 1/2 teaspoon vanilla extract
v  1 1/2 cups fat free half-and-half
v  1/4 cup rum or brandy (optional)
v  freshly grated nutmeg for garnish

Preparation
Combine nutmeg, sugar, and cinnamon using large bowl, then add egg along with egg whites.  Beat using a mixer for approximately 3 to 4 minutes.

Heat fat free milk using large saucepan, do it gently. Stir egg mixture gradually into the milk. Stir constantly while heating until the mixture is slightly thickened. Add vanilla extract while stirring, and then remove.

Let the mixture cool for a while, and then blend it with the fat-free half-and-half milk. Cover and chill in the refrigerator. Add brandy or rum as desired and add some freshly grated nutmeg on top before serving.

Ingredients:
1 lemon, halved
6 baby artichokes
3/4 pound sun chokes, scrubbed but not peeled
3 tablespoons canola oil
18 fresh sardines (about 2 ounces each), cleaned and scaled
Freshly ground pepper
Salt
2 garlic cloves, thinly sliced
2 tablespoons extra-virgin olive oil
3 cups loosely packed flat-leaf parsley leaves
2 tablespoons chopped oregano
2 tablespoons capers, drained
2 Serrano chilies, seeded and minced
1 teaspoon finely grated lemon zest
4 cups baby arugula (4 ounces)
3/4 cup green olives, such as Cerignola, pitted and chopped
2 tablespoons fresh lemon juice
